Garlic is antibacterial and anti-fungal. It contains a sulfur compound that can help reduce cholesterol and the amount of unhealthy fat in the liver.
- 1 t garlic, grated
- 2 medium sweet potatoes, diced
- 1 T olive oil
- salt & pepper
Method: Preheat oven to 375˚F. On a baking sheet mix together all ingredients until the sweet potatoes are evenly coated and garlic is evenly dispersed. Cook for 25 minutes – or until browned and tender. I love to make a lot of these and have them in the fridge any meal. Serves 3-4.
