Greek yogurt is 30% protein and is one of the highest satiety foods leaving your feeling fuller. They are great for breakfast, snacks and desserts.
- ¼ c muesli or granola (unsweetened)
- 1 T apple juice
- ½ cup Greek yogurt
- ½ cup fresh or frozen fruit, bite sized – blackberries, blueberries, strawberries (quartered), raspberries, nectarines (sliced), etc…
- 1 T cacao nibs (optional)
- sprinkle of cinnamon (optional)
Note: great and easy to prep in advance, good for 3 days.
Method: In a small bowl combine muesli and apple juice. Let sit for 1 minute so the muesli absorbs the apple juice for a natural sweetness. In mason jar (or wine glass/mug/bowl), assemble the parfait in layers starting with muesli, Greek yogurt then fruit. Continue in as many layers as desired and top with cacao nibs and cinnamon, if using. Serves 1
