Peanut butter helps boost your energy and can help with weight loss. It’s high protein and fiber content can make you feel fuller for longer.
- 1 avocado
- 1 banana
- 3 T unsweetened cocoa or cacao powder
- 3 T peanut butter
- 2 T maple syrup (or agave/honey)
- 2 T milk of choice (I like oat milk)
- *optional toppings: coconut flakes, peanuts, cacao nibs, hemp seeds, fresh berries, etc…
Note: this is high in fat so a little is all you need
Method: Add all ingredients into a food processor and blend until creamy and smooth. Alternatively, mash with a potato masher or fork. The latter might not be as smooth but works just as well. Add more milk to thin/help blend if needed. Add more cocoa powder for a richer chocolate flavor. Cover with plastic wrap by pressing the plastic wrap directly onto the pudding with no air bubble – otherwise a skin will form. Cool in the fridge for at least 30 minutes if you prefer it to be cool. Can keep for up to 3 days in the fridge, but best fresh. Serves 2-3.
