Breakfast Salad

Arugula can lower risk of cancer, help prevent osteoporosis, and promotes increased energy.

Ingredients:

  • 1 ½ cups arugula
  • 1/4 cup canned black beans, cooked in liquid
  • 1/4 t garlic powder
  • 1/2 t onion powder
  • 1-2 eggs scrambled, over easy, or your favorite way
  • 1 T coconut oil, grass fed butter or olive oil for frying
  • salt & pepper
  • cilantro and green onions 
  • 2 T red onions, thinly 

Method: In a small pot, pour the entire can of beans (including liquid), garlic and onion powderand bring to a simmer. Cook until most of the liquid has cooked down and salt and pepper to taste. Arrange arugula on a plate or bowl, top with black beans and red onions. In a hot pan, add 1 T of oil and add eggs. Cook as desired, i.e., scramble or cook over easy. Top salad greens with cooked eggs, season with salt and pepper with option to garnish with cilantro, green onions and/or red onions. Serves 1.
