Someone recently asked me how they can be paleo and have their oatmeal too, HA!
I did some snooping and I came up with this little number.
- 1 banana
- 1 T flaxseeds
- 1 T chia seeds
- 1/2 - 3/4 c milk of choice - I use oat meal.
- 2 T almond meal
- 1 T coconut oil - or grass fed butter
- dash of salt
- pinch of cinnamon
- toppings of choice - berries, nuts, seeds, cacao nibs, apples, etc...
Mash banana in non stick pan (mash before so not to ruin your pans). Let warm for 1 minute in pan.
Add flaxseeds, chia seeds, milk and almond meal. Constantly stirring until the "oatmeal" starts to thicken. Add more milk if necessary as the flax and chia seeds will start absorbing and plumping.
Once the mixture is to your liking and heated thru, transfer to a bowl, add a spoon full of coconut oil, the salt and cinnamon. The salt and coconut oil really adds a nice flavor. Top with whatever you have - I used blueberries and cacao nibs because that's what I had.
I enjoyed this with my matcha green tea latte.
