Raw foods help promote healthy skin, increased energy and a strong immune system! This is a great recipe if you want a clean lunch or snack.
- 4 sheets of nori, collard greens leaves or wrap of choice
- ½ c shredded carrots
- 1-2 persian cucumbers, julienned
- 1 bell pepper, julienned
- 1 bunch romaine or shredded cabbage
- Mint, basil, cilantro or green onions, chopped (optional)
- Edamame dip or spread of choice
Method: Make the edamame dip with recipe given. Wash and cut all the ingredients and dry as best as possible! Slice the cucumber, carrot, and bell pepper as thinly as you can into long sticks. Shred the cabbage. Lay your wrap on a flat surface. Spread your dip on evenly in a long strip, adding a little of the rest of your ingredients. If adding fresh herbs, give a little sprinkle on the top before you start rolling.
Fold the left and right edges in, then roll the whole wrap away from you to form a roll. If using nori, moisten the edge of the nori with some water and lay the wrap seam side-down for a few minutes until the seaweed dries. Repeat until all ingredients are used.
If any extras are left, it’s an easy way to use them in salads or as raw snacks. Use guacamole, hummus, tahini dressing, or edamame to dip in, or dressing of choice!
